DESCRIPTION OF HARVEST AND PROCESSING TECHNOLOGY:
The wines are processed separately with a longer cold maceration for greater extraction. Maceration of Chardonnay with the stems up to 24 hours, and Sauvignon without the stems up to 12 hours. Squeezed in the old wooden presses.
OENOLOGIST’S DESCRIPTION OF THE WINE:
Chardonnay fermentation on its own yeasts in 225 L Berique , malolactic, ripening on fine sediments for 24 months. Sauvignon fermentation in stainless steel tank, ripening on fine sediments up to 24 months submitted to reduction conditions. After 24 months the wines are blended and set to further ripening in large wooden barrels for 12 months. Filled after completely three years of ripening and aged for another year the barrel.
This great wine is recommended upon an obligatory decantation at least two hours before the service. An ideal pairing to pasta with sauces and all sophisticated meat dishes. Especially powerful match with mature, ripened sheep cheeses and mold cheeses.
