DESCRIPTION OF HARVEST AND PROCESSING TECHNOLOGY:
The wines are processed separately, with a longer maceration, and up to 25 days fermented for better extraction. Poured off on the pneumatic press, and finished malolactic fermentation in stainless steel tanks.
ENOLOGIST’S DESCRIPTION OF THE WINE:
Upon decantation from coarse sediments after its fermentation, each wine matured process lasted for 24 months with an annual decantation ~ aeration in Slavonia oak 1100 L barrels for additional 12 months of maturation. Another 24 months of maturation in bottles.
This great wine is recommended upon an obligatory decantation at least two hours before the service. An ideal pairing to any dark meat, especially game. Especially powerful match with mature , ripened sheep cheeses.
